Helping to fuel my obsession with Nutella I had a play around with the classic cup cake recipe on Sunday and added a fair few dollops of Nutella to it.
Ingredients (for 12)
100g of butter
100g of caster sugar
100g of self raising flower
2 eggs
two lids full of vanilla extract (optional)
plenty of nutella
grated or chopped hazelnuts, almonds or chocolate
You start of by just following a normal cup cake recipe. I pre heat my oven at gas mark 4, then start by beating the butter and sugar together in a bowl until it looks light and fluffy. Then add one egg beat it in, then repeat with the next egg. I then add my flavouring, this time vanilla and fold in the flower. Once it is all mixed in you can start to put the mix into the cases.
Now this is where my recipe changes from its traditional roots, I put almost how much mix in to each case as I normally would but then added a dollop of Nutella to the middle. Then add a little more mixture over the top. Make sure to have the Nutella very near the top, as the cakes rise but the Nutella does not, so it can end up right at the bottom otherwise.
Once you have filled all the cases with the mixture put them in the oven for around 15 minutes. While in the oven grate your preferred topping, I chose hazelnuts (yes I did grate something about the size of a pea!) When the cakes are cooked, carefully take them out of the oven, placing them on a baking tray. Here add Nutella on the top with a spoon (as you would icing), sprinkle on your chosen toppings and enjoy!
